Ankit Patras (Ph.D.)
Associate Professor
Food Science and Biosystems Engineering (FSBE) Lab
Education: Ph.D. (2009), School of Biosystems Engineering, College of Engineering & Architecture, Institute of Food and Health, University College Dublin, Ireland.

Research Interests: Non-thermal process technologies, Pilot engineering, Process optimization, Physics based modelling, Inter-facial physics, Fundamentals of photon transport (materials), Understanding microbial resistance, optical modelling and simulations, Control of viral and bacterial transmission, Natural therapeutics, Molecular docking & simulations.

Key topics of research include:

  • Optical technologies for food safety (fluid and surface disinfection), Understanding UV resistance of DNA and RNA based viruses including vegetative cells and endospores;
  • Plasma and ozone-based technologies for food applications;
  • Physics based models for process optimization, validation of food processes;
  • Chemical and Microbial Kinetics;
  • Process implementation;

 We use a combination of theoretical (mathematics, physics) and experimental approaches to elucidate the fundamental physical and biological mechanisms of viral and bacterial inactivation including mycotoxins detoxification. Light based  strategies to understand and control the  spread of viral and bacterial outbreaks. Based on these approaches appropriate process scale-up can be achieved.

Teaching: Principles of Food Engineering and Processing (3690), Advanced Food Engineering and Processing (5520)
